LITTLE ROCK, Ark. (KTHV) -- On this last day of Kid's Corner week, we're going to show you how to make banana bread.
Cynthia Malik will join Ashley, Alyse and Tom to demonstrate banana bread and Aiyla East, a student Woodrow Cummins Elementary, and Evan Malik, a student at Ruth Doyle Intermediate, will demonstrate how to make yummy flavored yogurts.
Yield: 1 Loaf
3-4 ripe bananas, mashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
¾ cup all purpose flour
½ cup whole wheat flour
½ cup oats
1. Mix the melted butter into the bananas. Mix in sugar, egg and vanilla.
2. Combine the baking soda, salt, flours and oats and mix well.
3. Add the dry ingredients to the banana mixture and mix well.
4. Pour into an ungreased loaf pan and bake for 1 hour at 350 degrees or until a toothpick comes out clean.
Variations: Use ½ cup sugar and ½ cup sorghum that has been melted in a warm water bath.
