LITTLE ROCK, Ark. (KTHV) -- Arkansas-based Dillard's is offering you some ideas for the holidays with its Southern Living Cook Book. Proceeds from sale of the cookbook benefit Ronald McDonald House.
Carole Daley from Dillard's and Chef Donnie Ferneau previewed some of the recipes inside the book on "THV 11 This Morning".
Here are the two recipes they demonstrated:
5 cups orange juice
2 cups chilled lemon-lime soft drink
½ cup maraschino cherry juice
¼ cup fresh lemon juice
Garnishes: lemon slices, fresh rosemary sprigs
Stir together first four ingredients; serve over ice.
Roasted Orange-Ginger Asparagus
2 lb. fresh asparagus
1/4 cup orange juice
2 tbsp. olive oil
1 tbsp. grated fresh ginger
1 tbsp. Dijon mustard
1/2 tsp. table salt
1/4 tsp. black pepper
1. Preheat oven to 400 degrees. Snap off and discard tough ends of asparagus; place asparagus on a lightly greased baking sheet. Whisk together orange juice, olive oil, and next four ingredients; drizzle mixture over asparagus, tossing to coat.
2. Bake for 15 minutes or to desired degree of tenderness, turning over once after 8 minutes.
