Anthony Michael cooks up easy, easy greens

    LITTLE ROCK, Ark. (KTHV) - Greens are a popular dish for Arkansans and Anthony Michael from Cross-Eyed Pig has what he calls an "easy, easy" recipe.

    Easy, Easy Greens

    1 sack of mustard greens
    1 sack of turnip greens
    1 lb smoked meat (chicken, ham, beef)
    1 onion, chopped
    1 jalapeno, chopped
    4 cloves garlic, chopped
    2 tablespoons Louisiana hot sauce
    1 tablespoon cumin
    1 tablespoon salt
    1 tablespoon pepper
    2 quarts of water
    1 quart of broth

    Remove heavy stems from greens and then wash the leaves at least 3 times thoroughly. In large pot, saute onions, jalapenos, garlic, hot sauce, cumin and salt and pepper. Add meat and simmer for 5 minutes. Add some of the greens along with water and broth. Cook on low heat and then add more greens as it cooks down. Once all greens are in pot, increase heat and let cook for one hour. Reduce heat and let simmer for 7 hours.
