LITTLE ROCK, Ark. (KTHV) Christmastime means friends and families coming together to enjoy a holiday meal.
And that meal can consist of many food varieties, whether it be a turkey, ham, roast beef, or even prime rib and can combine traditions from around the globe.
Our friend James Staats with Golden Corral, along with Doug Macintire of Hobart Equipment, stopped by the THV studios to show how to prepare a lighter version of fried chicken.
Skinless chicken breasts
Panko bread crumbs
Preheat a cast iron oven with extra virgin olive oil. Meanwhile, in a bowl mix together flour, bread crumbs, salt, pepper, garlic powder (and whatever other spices you desire). Then take your chicken breast and dip it in plain flour, then egg mixture (three eggs beaten) and then the flour/bread crumb mixture. Drop the chicken breast into your preheated pan. Brown on one side in the pan for about 3 minutes. Then flip over and immediately put pan into a preheated 350 degree oven. Let it cook for approximately 10 minutes or until the chicken has an internal temperature of 160 degrees.
