Anthony Michael: Pecan-Cranberry Crusted Pork Loin

    LITTLE ROCK, Ark. (KTHV) - If your New Year's resolution is to cook at home more, Anthony Michael from Cross-Eyed Pig has a delicious and easy recipe for pecan-cranberry crusted pork loin that's sure to please your whole family.

    3-5 lb pork loin
    1 cup brown sugar (plus extra for rub)
    2 cups or 14 oz can of jellied cranberry sauce
    1 cup crushed pecans
    1/2 cup applesauce
    1/4 teaspoon cinnamon
    Dash of cayenne

    Trim fat off pork loin and rub with brown sugar. Wrap in plastic wrap and place in fridge overnight or for at least six hours. Cook in oven at 300-350 degrees for 30-45 minutes. Internal temperature of meat should be 150-160 degrees. Wrap in foil and set aside for 10 minutes to allow additional cooking.

    For glaze, mix together in sauce pan: brown sugar, cranberry sauce, pecans, applesauce, cinnamon and cayenne. Cook until hot. Don't boil. Pour glaze over pork loin and enjoy!
