    Anthony Michael grills up pork steaks

    LITTLE ROCK, Ark. (KTHV) - The warm temps will be here soon and that means many Arkansans will be opening up the grill!

    Anthony Michael from Cross-Eyed Pig is getting you ready for grilling season with everything you need to know about cooking pork steaks.

    Pork steak is a Boston Butt pork steak - sliced cross wise. It's typically cheaper than a lot of other pork.

    Anthony suggests brining them overnight.

    Brine:

        Half cup of Kosher salt to a half a gallon of water

        Louisiana Hot Sauce 

    Dissolve all ingredients and soak in fridge overnight. This helps keep the pork steak moist.

    To cook: Sprinkle with black pepper, and barbecue seasoning on both sides.

    Then just cook it like you would a pork chop.  Baste with barbecue sauce while it's on the grill. A barbecue mop is the best way to make sure you don't waste sauce. A good way to test it too see if it's done is to cook until it's firm.
