Great Scotts Muffin Recipe

    5 cups All purpose flour 1 1/2 cups sugar 1 tbs Baking powder 1 tsp salt 3 Eggs 1/2 cups oil or butter 2 1/4 cups water/milk/juice/buttermilk (your choice) 3 cups particulates (frozen berries, sliced fruit, chips, etc) Combine the dry ingredients in a bowl and whisk together. In a seperate bowl whisk the eggs and the oil together. Once the egg and oil are combined then add the liquid you are using (water, milk, etc). Next you will want to mix the particulates into the dry mix to coat with flour. This will prevent all the particulates from sinking to the bottom while baking. Now you add the wet to the dry and mix just to incorporate all the ingredients. It is important not to over mix the batter. Now just scoop into paper lined muffin tins. If making jumbo muffin you should yield 12 muffins. Feel free to top the muffins with some sugar or streusel. Bake for 20 minutes at 375 degrees, spin the tray 180 degrees and bake for another 20 minutes. Bake time will vary with different muffins. If baking smaller muffins adjust baking time.
