    Scallop And Lobster Ceviche

    8 oz. lobster meat, cleaned, cooked 8 oz. fresh, dry packed sea scallops 3-4 roma tomatoes, seeded, cored ½ red onion 1 red bell pepper, seeded ½ yellow bell pepper, seeded 1 jalapeno pepper, seeded 1 green apple, peeled and cored 3 tbsp. fresh cilantro 4 tbsp. lime juice, freshly squeezed 1 tbsp. rice wine vinegar 1 tbsp. extra virgin olive oil dash vodka (to taste) salt and black pepper to taste 1. finely chop all dry ingredients and place in a non-reactive bowl (stainless steel). 2. combine in liquid ingredients and mix thoroughly. Allow mixture to stand covered in refrigerator for twelve hours. 3. toss ceviche again and serve chilled in an interesting glass or bowl. garnish with fresh cilantro or scallion. 4. you can make this dish your own by adding additional items like mango, pineapple, papaya, jicama, or any number of other ingredients.
