Avocado Veggie Gazpacho

    Serves about 8

    -3 cups vegetable juice (we used Very Veggie by Knudsen)

    -2 cups tomatoes, seeded and diced (about 5 medium tomatoes)

    -1 tomatillo, diced

    -1 cup green bell pepper, diced

    -1 cup red onion, diced

    -1 medium cucumber, peeled, seeded, and diced

    -2 green onions, diced

    -1 tablespoon agave nectar or honey

    -2 medium avocado, pitted and diced

    -1 clove garlic, minced

    -1 tablespoon jalapeno chili pepper, minced

    -1 tablespoon red wine vinegar

    -1 tablespoon fresh lime juice
    salt and pepper, to taste

    Combine all ingredients together in a large bowl or stockpot. Puree half of the ingredients in a blender or food processor and return to bowl with other diced ingredients. Use salt and pepper to taste. Garnish with cilantro and sour cream if desired. Serve chilled.

    Per Serving: 135 Calories; 8g Fat (48.9% calories from fat); 3g Protein; 16g Carbohydrate; 4g Dietary Fiber; 0mg Cholesterol; 344mg Sodium.
